Moosewood - Black Bean and Hominy Frittata and Herb and Cheese Muffins

Chopped butternut squash ready for roasting*
I chose to substitute butternut squash for the hominy for
health benefits.

Frittata ready for cooking
I covered and cooked on top of stove for 5 minutes.
Then, I removed lid and put under broiler for 5 minutes.

Since I was making the frittata for one, I split the recipe in half using 2 whole eggs and 2 egg whites. 

*Roasting butternut squash - I used a seasoned Lodge iron skillet for roasting the squash. 
           Heat oven to 400 degrees.
           Chop the squash into equal sizes.  Since I was substituting it for hominy, I chopped it into what
           I thought was about the size of a large piece of hominy. 
           Heat skillet for about 5 minutes, then wipe with a small amount of sunflower oil.
           Add the squash.  Roast in hot oven until soft, but maintaining shape, about 20 minutes.
*Roasting red peppers -
          Heat oven to 425 degrees.
          Wash peppers and remove stickers.  Place into deep sided baking pan.
          Check peppers after 15 minutes.  If the skin is black, turn peppers so that the unblackened skin is
                    up.
          Repeat checking and turning until all sides of the pepper have blackened.
          Remove peppers from pan to a dish with lid immediately upon removing from oven. Cover.
          I let peppers sit over night in refrigerator to make them easier to clean.  Remove skins, stems,
                    and seeds.
         You can store unused peppers in refrigerator to use in recipes or to warm and eat as dinner side.
                    Or they can be frozen in freezer bags.
*Red pepper olive oil - Fill a glass bottle with dried chili peppers - arbol.  Then, pour extra virgin
                    olive oil into the bottle covering the peppers.

Juicing the lemons and grating the peel
Remember to roll the lemons before squeezing.  This makes it much easier to obtain the juice.
Using a microplane for grating makes the job a breeze.

Light, tart and fluffy
I decided to use one souffle dish rather than the 6 8-ounce ramekins called for in the recipe.  To insure that the cake would rise in the large dish, I add a bit more baking powder and one additional egg white.  To decrease the calories from sugar, I used Stevia in place of the sugar 1:1.

This was a delicious, refreshing dessert.  The cake separated in the baking leaving a layer of tart lemon pudding on the bottom and a light sponge cake on top.

Moosewood - Mediterranean Lentil Salad




Ingredients

As you can see, this is a very simple recipe 
Cooked lentils
boil the lentils, roasted garlic cloves, bay leaves and thyme until lentils are cooked.
Final Mixing
Add roasted peppers, sun-dried tomatoes, and celery.  Stir in dressing:  olive oil, vinegar, Dijon mustard, salt and pepper.


Salad ready for travel.

I packed this salad into my cooler bag when I left Cleveland for New Jersey.  I made a stop along I-80 for lunch.  Since I always carry walnuts in the car with me, I added a few to the salad before eating.

Starbucks Update - South Beach, Florida

During a trip to Florida in February, I was able to visit both of the Starbucks on Lincoln Road Mall South Beach, Miami Beach.  Both have great locations for hanging out and watching people.  The one in the picture on the bottom had a good window bar for people watching and working.  Unfortunately, I was very disappointed in one of the baristas at that location.  I found his behavior rude.  Although he was not rude to me, having to witness his unnecessary rudeness to another customer was very unpleasant.  Like most people, I go to Starbucks and willingly pay higher prices for my coffee because I enjoy being in Starbucks.  My expectation is to find happy employees who treat everyone with respect.
