Moosewood - Black Bean and Hominy Frittata and Herb and Cheese Muffins

I chose to substitute butternut squash for the hominy for
health benefits.

Frittata ready for cooking
I covered and cooked on top of stove for 5 minutes.
Then, I removed lid and put under broiler for 5 minutes.

Since I was making the frittata for one, I split the recipe in half using 2 whole eggs and 2 egg whites. 

*Roasting butternut squash - I used a seasoned Lodge iron skillet for roasting the squash. 
           Heat oven to 400 degrees.
           Chop the squash into equal sizes.  Since I was substituting it for hominy, I chopped it into what
           I thought was about the size of a large piece of hominy. 
           Heat skillet for about 5 minutes, then wipe with a small amount of sunflower oil.
           Add the squash.  Roast in hot oven until soft, but maintaining shape, about 20 minutes.
*Roasting red peppers -
          Heat oven to 425 degrees.
          Wash peppers and remove stickers.  Place into deep sided baking pan.
          Check peppers after 15 minutes.  If the skin is black, turn peppers so that the unblackened skin is
                    up.
          Repeat checking and turning until all sides of the pepper have blackened.
          Remove peppers from pan to a dish with lid immediately upon removing from oven. Cover.
          I let peppers sit over night in refrigerator to make them easier to clean.  Remove skins, stems,
                    and seeds.
         You can store unused peppers in refrigerator to use in recipes or to warm and eat as dinner side.
                    Or they can be frozen in freezer bags.
*Red pepper olive oil - Fill a glass bottle with dried chili peppers - arbol.  Then, pour extra virgin
                    olive oil into the bottle covering the peppers.

Remember to roll the lemons before squeezing.  This makes it much easier to obtain the juice.
Using a microplane for grating makes the job a breeze.

Light, tart and fluffy
I decided to use one souffle dish rather than the 6 8-ounce ramekins called for in the recipe.  To insure that the cake would rise in the large dish, I add a bit more baking powder and one additional egg white.  To decrease the calories from sugar, I used Stevia in place of the sugar 1:1.

This was a delicious, refreshing dessert.  The cake separated in the baking leaving a layer of tart lemon pudding on the bottom and a light sponge cake on top.

Moosewood - Mediterranean Lentil Salad




Ingredients

As you can see, this is a very simple recipe 
Cooked lentils
boil the lentils, roasted garlic cloves, bay leaves and thyme until lentils are cooked.
Final Mixing
Add roasted peppers, sun-dried tomatoes, and celery.  Stir in dressing:  olive oil, vinegar, Dijon mustard, salt and pepper.


Salad ready for travel.

I packed this salad into my cooler bag when I left Cleveland for New Jersey.  I made a stop along I-80 for lunch.  Since I always carry walnuts in the car with me, I added a few to the salad before eating.

Starbucks Update - South Beach, Florida

During a trip to Florida in February, I was able to visit both of the Starbucks on Lincoln Road Mall South Beach, Miami Beach.  Both have great locations for hanging out and watching people.  The one in the picture on the bottom had a good window bar for people watching and working.  Unfortunately, I was very disappointed in one of the baristas at that location.  I found his behavior rude.  Although he was not rude to me, having to witness his unnecessary rudeness to another customer was very unpleasant.  Like most people, I go to Starbucks and willingly pay higher prices for my coffee because I enjoy being in Starbucks.  My expectation is to find happy employees who treat everyone with respect.

MOOSEWOOD: DIXIE BURGERS

SIS and I decided to make Dixie Burgers from MOOSEWOOD RESTAURANT NEW CLASSICS.  Fortunately for me Moosewood has posted a copy of this recipe online.
                                                                                                                                                            

Ingredients

I found that my burgers did not hold together well, which was not a problem for me becuase I ate mine with a fork.  I thought that perhaps my burgers were too wet from the tofu, but Sis did not use the tofu and she had the same problem.   She suggested that we could add an egg to the mix.  She decided to freeze one of hers for future reference.

The huge burgers only have 188 calories per burger with 5 grams of fiber.

I love Dr. Oz's television show and web-sites.  Recently he talked about the amazing benefits of eating Lingonberries, thus the reason that I had the sauce on hand.  It was the perfect topping for the Dixie Burger.

A New Direction

Sometimes you can feel change coming, sometimes not, sometimes it hits you broadside.  It doesn't matter that it comes, it matters what you do with it and how you respond. 

I could feel that I was becoming less and less interested in spending all of my blog focus on Starbucks.  don't get me wrong, I still love Starbucks and intend to visit as many Starbucks stores as I can.  I hope to write a blog here and there about them.  I want Starbucks to be around for many years to come.  I loved meeting people and listening in on others' conversations.  I will still attempt to visit a Starbucks weekly so that I can find interesting things to write about in my soldier's letters.

But now, along with Sis, one of my very dear friends, I've decided to blog about another American business,  Moosewood.  Many many years ago, I read about this wonderful vegetarian restaurant in up-state New York.  Over the years, I talked about how someday I wanted to visit this restaurant.

I have toyed with idea of becoming a vegetarian since 1977 and have even gone totally meatless for months at a time over the years.  Once I married in 1981, I realized that not everyone, including my husband, was "enlightened" to the meatless life.  I struggled to incorporate a meatless day into our week.  Unfortunately for me, my very first meatless night I made lentil burgers.  I ruined the recipe and we ended up at Steak n' Shake eating a full fat burger and those wonderful long stringy fries. I wonder if they still make those?  Anyway, that night has given us a good laugh over the years, especially my husband.  He always seems to love reminding me of that night.  No matter, I persevered, even if at a slower and more careful rate.

And what do you know?  Christmas 1992,  I received the Mollie Katzen MOOSEWOOD COOKBOOK 15 Years from none other than my meat lover husband.



 I was thrilled.  I still have fun looking back over my recipe notes.  One of my favorites is written on the page for Swiss Cheese and Mushroom Quiche, "Mike says, 'Okay.  Better than regular quiche.'"  When I read that, I crack a smile.  What could he have meant by "better than regular quiche"?  What could be better than a flaky pie crust filled with a mixture of eggs, cream, cheese and meat or eggs, cream, cheese, meat and a vegetable?  To me if the Moosewood quiche is better than regular quiche than it is pretty darn good!  But then, Mike is a man of the '70s, you know those "real men who don't eat quiche".    I have used this cookbook for almost 20 years now.  And for a couple of my dishes namely cornbread and eggplant parmesan this is the one and only source.

In 2010 while visiting Sis, we both realized that we shared a love of the Moosewood cookbooks.  I left her home in envy, she had a full collection and I had my one and only.  Since then we have touched on the cooking subject several times.  This year after Mary sent me a package with several interesting spice packets, we decided to "cook"  together, she in Kentucky and me in Ohio.  Our first dish was a lemon curry chicken and our second was a Greek spice mix marinated tofu.  We shared the process by one of us selecting a recipe and deciding on day for the cooking.  We text our progress to each other and then share pictures of our finished product.  We decided last week that we should focus on the Moosewood recipes.  So for fun, I said that I would blog about our cooking sessions.

Starbucks - Chagrin Falls, Ohio

Chagrin Falls is a cute little town on the east side of Cleveland.  Starbucks has a perfect location, right next to The Falls.  In the picture above on the left, you can see the side of the building which is the same building in the picture on the right.  Starbucks occupies the first floor.  If you are lucky enough to grab the one and only table near the side windows, you can enjoy a view of The Falls while you sip your beverage.  I liked this town from the first time that I saw it.  In many ways it reminds me of a New Jersey town.  There is a wonderful main street around a center grassy area in which a grandstand stands ready to host bands or plays or just the occassional passerby.  The main area of town is full of shops, cafes and restaurants.  I find it very inviting.

After this evening spent in the Chagrin Falls' Starbucks, I like this town even more.  The shop for hours was bustling with groups of children from ages 12 or so through teen years.  Even though I along with other customers grew tired of the noise from the children, their popping in, joking and laughing with each other made this Starbucks feel like a hometown hangout, which I feel America could certainly use more of.  You know, those places that people call home and expect to find friends or family there when they themselves go in.  I've only been in a few Starbucks that have given me that feeling.

I found myself drawn into a conversation by the gentleman sitting near me.  Prior to his talking to me I noticed that he seem to know many people who came in or were already in the store.  He was interested in my letter writing and felt perfectly comfortable inquiring about it.  Like many people, he found it interesting that i was writing so much by long hand.  Anyway, we ended up talking about spiritual matters.  He shared with me his views and those of his guru, Roy Masters.  I was able to end the conversation with a promise to google Roy.  Before Mr. Spiritual came in, there were two men sitting at his table.  And what a conversation they were having!  I heard one of the men say at one point "Well, she gives everything away.  March of Dimes called and she gave away all of my socks."  I had no idea that March Of Dimes collected used socks, but the other guy was buying it.  Those two were spending their time sampling the free Blonde Brew.

Comfort Comments:  Small but homey feeling shop.  There were two over stuffed arm chairs in the front window with a small table between them on which sat a reading lamp.  The reading lamps in the front windows give a warm look to the shop.  It seems to me that this shop had plenty of outlets.

Shop Critique:  This Starbucks is very clean.  The condiments table was well taken care of and the bathroom was clean.  I saw employees thoroughly cleaning the floors and area behind the bar.  As with most Starbucks in the Cleveland area there did not seem to be enough seating.  But there is no way that this store could add more and the crowds did seem to come in spurts and then thin.

Employee Comments:  The employees were very friendly and busy.  They were busy the whole time either serving customers or cleaning.
